You can switch between the two views with C-c C-c. LaTeX cannot be omitted because otherwise mode: Given how terrible the PDF format is, don’t expect it any time soon.
When you visit a file which would normally be handled by DocView mode but some requirement is not met e. TeX-PDF fails to set mode.
